Quick and Easy Zucchini and Mushroom Side Dish

Ingredients:

  • Half or whole zucchini sliced into half moon shapes
  • 1 Small, sweet onion sliced
  • About 7 mushrooms sliced  (baby bella or plain white) 
  • Minced garlic (1 Tbs) 
  • Garlic powder ( ½ Tbs) 
  • Extra Virgin Olive Oil ( 2-3 Tbs) 
  • Kosher salt and black pepper to taste 
  • Sesame seeds (optional)

 

 

Directions:

  1. Slice zucchini, onion, and mushrooms.
  2. Heat a medium- sized fry pan on medium- high heat with olive oil.
  3. Sauté the onions and the garlic for about 2 minutes
  4. Add in the zucchini and sauté for one minute.
  5. Finally, add in the mushrooms and sauté for about 3 minutes. Overall, cook until slightly tender but not mushy.
  6. Add in the salt, black pepper, and garlic powder to taste.
  7. Take off heat, plate it, and toss some sesame seeds on top for appearance.
